Cod is one of those underrated gems in the kitchen that’s not only delicious but also incredibly good for your body. Packed with lean protein, low in calories, and rich in essential nutrients like vitamin B12, iodine, and omega-3 fatty acids, cod supports everything from heart health to brain function. This week, I’m featuring Lemon Garlic Cod on my menu! Alongside some other mouthwatering meals like skirt steak with a side of Mexican corn, sheet pan pork chops, and my crowd-pleasing million dollar spaghetti! I’m so excited to share how simple and versatile cod can be. Whether you’re pan-searing it on the stovetop (my personal favorite), grilling it for a smoky finish, or baking it in the oven for an easy, no-fuss dinner, cod adapts beautifully to whatever your schedule demands. Cod has a mild, slightly sweet flavor with a tender, flaky texture that makes it a perfect canvas for bold or fresh ingredients. Lemon and garlic are a classic pairing (and one of the most delicious) bright citrus lifts the delicate fish, while garlic adds warmth without overpowering it. This combination keeps the dish light yet flavorful. For sides, cod pairs beautifully with roasted vegetables, a simple rice, or a green salad. I also love serving it with steamed asparagus or white rice to round out the meal with comfort and balance.
The Ingredients:
2 Cod Fillets (I prefer bonless AND skinless, again this is preference)
3 TBSP lemon juice
2 tsp lemon zest
2 cloves of garlic, minced
3 TBSP salted butter
Seasoning of your choice (I like kinders lemon herb and garlic salt)
One of the best things about this Lemon Garlic Cod recipe is how flexible it is, you can cook it just about any way you like! It works perfectly in a skillet for a quick stovetop sear, or you can bake it in the oven for an easy, hands-off dinner. Want something even quicker? Pop it in the air fryer for a crispy finish without the extra oil. You can even throw it on the grill for a slightly smoky, charred twist. And if you’re craving something more indulgent, this recipe makes a great base for a battered fish variation too. However you cook it, the flavors hold up beautifully!
Lemon Garlic Cod, FULL RECIPE
Rinse the residue off the fish fillets, and pat dry with paper towels. Set the fish aside and start prepping your butter mixture.
In a bowl mix together the melted butter, lemon juice, lemon zest, and minced garlic. Once that is combined you will start to prep and season your cod with whatever dry seasoning mixture you like. I always gravitate to kinders lemon herb seasoning!
Cover the cod generously with butter mixture once seasoned and ensure that it is coated evenly.
If youre baking cod you will be preheating the oven to 375 and baking for roughly 15 minutes (it needs to reach an internal temp of 145!
Once internal temp is reached, serve!
