The Easiest Summer Cobbler

There’s something magical about summer fruit... berries bursting with juice, peaches dripping with sunshine, and the inevitable handful of leftovers at the end of the week that are just a tiny bit past their prime. That’s where this fruit cobbler comes in. It’s my go-to rescue mission for those still-kicking berries and stone fruits, transforming them into a warm, jammy dessert with a golden, buttery topping.


It’s rustic, it’s forgiving, and best of all, it’s a celebration of summer’s sweetest scraps. Serve it warm with a scoop of vanilla ice cream, and you’ve got yourself the perfect ending to a sunny day.

Ingredients:

  • 1 cup white all purpose flour

  • 2 tsp baking powder

  • 1/2 tsp table salt

  • 1 cup white sugar, divided for 2 parts of recipe!

  • 1/4 cup SOFTENED not melted salted butter

  • 1/2 cups milk

  • 2 cups any berry mix or stone fruit

  • 1/4 tsp vanilla


Instructions:

  1. Preheat oven to 375 degrees and grease a baking dish of your choice (preferably a loaf pan).

  2. In a mixing bowl you will combine flour, baking powder, and salt. Stir and then set aside.

  3. In a separate bowl beat together the sugar, butter, and vanilla. You'll want to keep beating until fluffy or lighter in color!

  4. Once completely mixed individually, you'll want to slowly combine along with milk. Mix it in alternately in small portions.

  5. When its well combined, pour it into the prepared dish. Spoon in all the fruit and once you finish with that, sprinkle with remaining sugar.

  6. Bake for 45-50 minutes, or until the toothpick comes out clean. Let cool slightly before serving, I like to top with honey!


So next time you find yourself with a handful of tired berries or that one peach you forgot in the fruit bowl, don’t toss them... cobble them! This easy, breezy dessert is proof that a little bit of fruit and a lot of love (plus butter, let’s be honest) can go a long way. Whether you’re sharing it at a backyard cookout or sneaking a spoonful straight from the dish at midnight, this summer cobbler never disappoints.
