Creamy spinach orzo bowl with a hint of lemon 🍋 Rich, silky, and packed with flavor… this is the kind of side dish that steals the show.

Ingredients
• 1.5 cups orzo
• ½ yellow onion, minced
• 2.5 cups chicken stock
• 3 handfuls spinach (1/2 container)
• 2 tsp lemon juice
• 1 tsp garlic powder
• ½ cup heavy cream
• Salt & pepper, to taste
• Rotisserie-seasoned chicken (optional but elite)

Method
1. Toast orzo and onion in a pan with a little oil or butter for a couple minutes, until fragrant and the onion turns translucent.
2. Add chicken stock and simmer ~10 minutes, until al dente.
3. Stir in spinach, lemon juice, garlic powder, and heavy cream.
4. Season with salt and pepper and simmer a few more minutes until creamy and glossy.

How I made the sauce:

1 1/2 tsp paprika
1 tsp rice vinegar
